All the hard work we've put into our gardens are coming to fruition. While some of my efforts haven't been as successful as I would like my zucchini plants are producing in abundance. White Zucchini Cake
1/2 cup butter
1/2 cup oil
1 3/4 cup sugar
3 eggs
1/2 cup milk
2 cups flour
1/2 tsp baking power, rounded
1 tsp baking soda, rounded
1 tsp salt
2 cups shredded zucchini
In one large bowl mix all dry ingredients, in another large bowl mix all liquid ingredients. Add dry ingredients to liquid ingredients and mix. Bake in a greased and floured bundt pan at 350* for 40 - 45 minutes.
